Super tasty delicious decadent light pancake. We make an easy dairy free pancake that is sweet and crispy, we top with some chocolate and orange zest and also a squeeze of the juice too. These are easy to make and vegan, and you are better using a non stick pan for best results.
120g wholemeal/ brown flour / use buckwheat for GF option
250ml non dairy milk
2 tbsp ground flax seeds/ 1/2 banana
Pinch salt
1 tsp vanilla extract
2 tbsp maple syrup
1 tsp baking powder
50g chocolate of choice
2 orange
In a blender add all ingredients and blend until till smooth. If you don’t have a blender just mash the banana using a fork (if using) and mix all ingredients and leave to sit for 3-4 mins for the flax to thicken the batter.
Heat a non stick pan on high heat. Once hot reduce to a medium heat.
Pour enough of the batter onto the warm pan and spread it out evenly so there is a thin evenly covering. leave them to cook until they start to bubble and form little aeration pockets (you’ll know what we mean when you are doing this!) and the top starts to dry out. Turn the pancake (silicon spatula works best) add a few small pieces of chocolate to one side of the pancake and cook till it starts to golden.
To serve zest on some orange and squeeze a little of the orange juice.
Repeat with the rest of your batter.
