Lemon drizzle cake - 5 ingredients

Steve’s daughter May came up with this recipe as she was planning a cake sale in the driveway one sunday! We modified this slightly to make it based on 5 ingredients. It’s super easy to make and is delicious and goes wonderfully with a cup of tea!

Takes 15 mins prep time & 60 mins baking time

Makes 10 slices


3 lemons (juiced and 2 lemons zested)

300g self raising flour

200g icing sugar/ powdered sugar

150ml oil

2 flax eggs (2 tbsp of ground flax seeds & 6 tbsp water)



100g Icing sugar / powdered sugar

Juice of 1/2 lemon

Preheat oven to 160 degrees c in fan oven

Mix ground flax seeds and the water and leave to sit for 5 mins.

In a large bowl sieve in the dry ingredients, the self raising flour, and the icing sugar and mix well.

In another bowl mix the wet ingredients, zest in the 2 of the lemons and the juice of 3 lemons, add in the oil and flax egg and mix well. 

Add in the wet ingredients to the dry ingredients and mix well.

Line a 2lb loaf tin with baking parchment and pour in the batter. A 1 lb loaf tin will also work fine

Bake at 160 degrees for 60 mins or until a skewer inserted comes out almost clean. You don't want the skewer to come out totally clean to ensure that they cake ends up nice and moist.

Take out of the oven and leave to cool

To make the drizzle sieve in the icing sugar and add the juice of half a lemon and mix well.

Drizzle over the top and allow to dribble down the sides
