5 Ingredient 'Snickers' Fudge Pie

A super tasty and easy cake that has only 5 simple ingredients, this one tastes just like a snickers bar! We use peanut butter, sweet potato, chocolate and dates to make a wonderful smooth and delicious chocolate peanut fudge filling to go inside a nut and date crust - this is delicious and oh so rich and tasty! Well worth trying.

300g cashews

300g dates



150g pitted dates

280g smooth peanut butter (the creamier the better)

300g chocolate 

450g sweet potato



  • Preheat the oven to 200 degrees. Cut the sweet potatoes into ¼ and bake them with their skin on for 30-40 mins until they are really soft and fully cooked. 
  • Fill and boil the kettle. Cover the cashew nuts for 10 mins. Drain and rinse the cashew nuts and add to the food processor along with the dates and blend until the mixture starts to come together. 
  • Carefully grease a 9inch or 24cm pie dish (ideally with a crinkled rim) with a little coconut oil and line with baking parchment, as this will make it easier to remove once the cake has set.
  • Add in the cashew and date batter and spread out evenly to make a smooth crust. A top tip here is to put some baking parchment on top of the date mixture and use a spoon to spread out, this will ensure you get a lovely smooth surface and finish. Take your time here and really ensure it’s evenly distributed and makes a lovely even crust. 
  • No need to clean out the food processor. Squeeze the sweet potatoes out of their skins into the food processor so only the soft cooked flesh is in the food processor. Melt the chocolate in a bain marie. Add to the food processor along with smooth peanut butter and blend until this is wonderfully smooth. Next add the pitted dates. Blend until lovely and smooth. This will be difficult to mix for most food processors so take your time and give your food processor a break if it’s getting hot and take your time, this may take up to 10 mins to get a wonderfully smooth texture.
  • Remove this mixture and spread out evenly into the pie dish. Again use some baking parchment on top and a spoon to even it out and spread it with ease. Take your time to ensure its beautifully smooth. Put this into the freezer for 10 mins to set.
  • Best way to cut this cake is to heat the knife up in boiling water and dry before making the cut and clean between cuts if you want to get a perfect slice
