One of our childhood favourites! This is an wonderfully indulgent cake which always satisfies the most chocolatey of itches! This is a super simple crowd pleasing recipe!
120g vegan biscuits of choice (such as vegan rich tea or digestive biscuits)
200g dark chocolate
100g coconut oil
100g maple syrup
Few tablespoons walnuts/vegan marshmallows/goji berries (optional)
Break the biscuits into small chunks
Put the dark chocolate in a bain-marie (water bath) together with the coconut oil and melt. Once melted, remove from the heat, add the maple syrup in and mix well. Leave the bowl on the bain marie/water bath to keep it liquid.
Line a brownie tray/bread tin with baking parchment and transfer the broken up double baked cookies.
If using the walnuts, roughly chop them into small bite sized pieces, if using the goji berries/marshmallows add them instead. Pour the chocolate over them and spread so that all the cookies are covered.
Put in the fridge to cool for about an hour but if like us you can’t wait that long put in the freezer to cool for about 30 minutes. Enjoy!!
